Roasted Potato & Broccoli

500g baby potatoes, cut into cubes
160g broccoli florets
2 garlic cloves, diced
½ onion, diced
25g butter, melted
3 tbsp extra virgin olive oil
2 sprigs rosemary
A few sprigs of thyme
Salt, to taste
Pepper, to taste

- 500 g Baby Potatoes, cut into cubes
- 160 g Broccoli Florets
- 2 Garlic Cloves, diced
- ½ Onion, diced
- 25 g Butter, melted
- 3 tbsp Extra Virgin Olive Oil
- 2 sprigs Rosemary
- A few sprigs of Thyme
- Salt and Pepper, to taste
Method
- Preheat the oven to 200°C (180°C fan) or gas mark 6.
- Spread the potatoes and broccoli on a large baking tray.
- Season with salt and pepper, then add the rosemary and thyme.
- Drizzle with melted butter and olive oil. Toss everything together.
- Roast for 10 minutes.
- Add the diced onion and garlic, toss again to coat.
- Return the dish to the oven and roast for an additional 15 minutes, or until golden brown and cooked through.
