2 eggs separated 
100ml buttermilk 
70g SuperValu Signature 40% milk or 85% dark Chocolate cut into small pieces 
A little vegetable oil to brush pan 
Icing Sugar to decorate

- Pancakes:
- 100g flour
 - 2 eggs separated
 - 100ml buttermilk
 - 20g SuperValu Signature 40% milk or 85% dark Chocolate cut into small pieces
 - A little vegetable oil to brush pan
 - Icing Sugar to decorate
 
 - Chocolate Sauce:
- 50g SuperValu Signature 40% milk or 85% dark Chocolate cut into small pieces
 - 25ml milk
 
 
Method
- To make the chocolate sauce, add the chocolate and milk to a saucepan and place it over medium heat.
 - Whisk until the chocolate has melted, then add a little more milk if required to create a smooth, pourable consistency.
 - To make the pancakes, separate the eggs. In a bowl, whisk the egg whites until they are fluffy and resemble clouds; set aside.
 - Add the flour and egg yolks to another bowl and mix until smooth.
 - Pour in the buttermilk and mix until combined.
 - Finally, carefully fold the egg whites into the mixture, but do not overmix or you will lose the air.
 - Brush a non-stick frying pan with a little vegetable oil and place it over medium heat.
 - Spoon 2 tbsp of the mixture onto the pan and cook for 1 minute, then sprinkle a little chopped chocolate on top.
 - Cook for about 1 minute until the edges begin to crisp. Flip the pancake over and cook the other side.
 - Serve with a dusting of icing sugar and a drizzle of chocolate sauce.
