Bircher Oats with Maple Roasted Apple & Pears and Peanut Butter

Ingredients
1 organic apple, sliced
1 organic pear, sliced
1 tsp olive oil
1 tsp maple syrup
½ tsp ground cardamom
½ tsp ground ginger
½ tsp ground cinnamon
Chopped pecans
2 cups SuperValu Organic Porridge Oats
½ tsp ground cinnamon
2 tbsp Supervalu Smooth Peanut Butter
4 tbsp apple sauce
2 cups milk of choice
Directions
- Preheat oven to 220℃. Prepare 2 x parchment paper-lined baking sheets.
- Place pecans on a baking sheet and toast while the oven is preheating - 15 minutes. Set aside to cool and chop finely.
- Toss apples and pears with olive oil, maple syrup and spices. Place evenly on a baking sheet and roast for 20 minutes, gently flipping halfway through. Use a fork to check tenderness and set aside.
- In a bowl, combine the oats, cinnamon, peanut butter and apple sauce. Once combined, add the milk and stir.
- Place the oat mix into two jars, top with your roasted apple and pear mix and sprinkle with toasted pecans. Cover and refrigerate overnight, or up to three days and enjoy chilled.
