Apple & Passionfruit Baked Oats

Ingredients
- 2 cups porridge oats
- 2 cups milk
- 2 medium free range eggs
- 1 tsp baking powder
- 1/2 tsp salt
- 3 apples, diced
- 1 tsp vanilla extract
- ½ tsp cinnamon (optional)
- 2 tablespoons raisins (optional)
- 2 tablespoons Signature Tastes Passion Fruit Curd (for serving)
- Supervalu Signature Tastes Vanilla Yoghurt (for serving)
Method
- Preheat your oven to 170°C.
- In a large mixing bowl, combine the porridge oats, milk, eggs, baking powder, and salt. Stir until well blended.
- Add the diced apples, vanilla extract, and cinnamon (if using). Mix thoroughly to ensure the ingredients are evenly distributed.
- If desired, fold in the raisins for added sweetness.
- For individual portions, divide the mixture evenly into 8 ramekins. Alternatively, transfer the entire mixture to a single baking dish.
- Bake the ramekins for 20 minutes, or the large baking dish for 40 minutes, until the oats are fully set and the top is golden.
- Remove from the oven and allow to cool slightly before serving.
- Serve warm, topped with a dollop of Supervalu Signature Tastes Vanilla Yoghurt and a drizzle of Signature Tastes Passion Fruit Curd for a delicious finish.
