1 Head butterhead lettuce
1 Red onion, sliced
1 Sweet pointed red pepper
150g Piccolo tomatoes
Handful of basil leaves
2 Slices of white bread cut into small squares
1 tbsp Extra virgin olive oil & 100ml for the dressing
25ml Balsamic dressing
1tsp Mustard
1tsp Honey
Pinch chilli flakes

Ingredients
- 1 Head butterhead lettuce
- 1 Red onion, sliced
- 1 Sweet red pepper, diced
- 150g Piccolo tomatoes, halved
- Handful of basil leaves
For the croutons:
- 2 Slices of white bread cut into small squares
- 1 tbsp Extra virgin olive oil
For the Dressing:
- 100ml Extra virgin olive oil
- 25ml Balsamic dressing
- 1tsp Mustard
- 1tsp Honey
- Pinch chilli flakes
Method
- To make the dressing, combine all ingredients together and whisk together.
- To make the croutons, toss the bread squares in olive oil and bake at 200C, 180C fan, gas 5 and bake for 10 minutes until golden.
- To assemble, start with the lettuce as a base, scatter the red onion on top, followed by the peppers, tomatoes and basil leaves.
- Drizzle over the dressing and add the croutons.
