Ingredients
1 Head butterhead lettuce
1 Red onion, sliced
1 Sweet pointed red pepper
150g Piccolo tomatoes
Handful of basil leaves
2 Slices of white bread cut into small squares
1 tbsp Extra virgin olive oil & 100ml for the dressing
25ml Balsamic dressing
1tsp Mustard
1tsp Honey
Pinch chilli flakes

Ingredients

  • 1 Head butterhead lettuce
  • 1 Red onion, sliced
  • 1 Sweet red pepper, diced
  • 150g Piccolo tomatoes, halved
  • Handful of basil leaves

For the croutons:

  • 2 Slices of white bread cut into small squares
  • 1 tbsp Extra virgin olive oil

For the Dressing:

  • 100ml Extra virgin olive oil
  • 25ml Balsamic dressing
  • 1tsp Mustard
  • 1tsp Honey
  • Pinch chilli flakes

Method

  1. To make the dressing, combine all ingredients together and whisk together.
  2. To make the croutons, toss the bread squares in olive oil and bake at 200C, 180C fan, gas 5 and bake for 10 minutes until golden.
  3. To assemble, start with the lettuce as a base, scatter the red onion on top, followed by the peppers, tomatoes and basil leaves.
  4. Drizzle over the dressing and add the croutons.
