Ingredients
200 g Brown Rice
0.5 - Cucumber diced
200 g Frozen Peas or frozen soya beans (defrosted)
1 bunch SuperValu Fresh Coriander roughly chopped
2 - SuperValu Fresh Salmon Darnes
1 bunch SuperValu Scallions chopped
4 tbsp Light Soy Sauce
1 - Lime zest and juice
1 - Red Chilli deseeded and finely chopped
Directions

Ingredients

  • 200 g Brown Rice
  • 0.5 - Cucumber diced
  • 200 g Frozen Peas or frozen soya beans (defrosted)
  • 1 bunch SuperValu Fresh Coriander roughly chopped
  • 2 - SuperValu Fresh Salmon Darnes
  • 1 bunch SuperValu Scallions chopped
  • 4 tbsp Light Soy Sauce
  • 1 - Lime zest and juice
  • 1 - Red Chilli deseeded and finely chopped

Method

  1. Cook the rice as per the packet instructions and add the beans/peas 3 minutes before the rice is done. Drain and cool under running water.
  2. Put the salmon on a plate and cook on high in the microwave for 3 minutes, until cooked through. Remove the skin and discard, then flake the salmon.
  3. Gently mix the salmon, cucumber, spring onions and coriander into the rice and beans.
  4. Mix the chilli with the lime zest and soy sauce, pour the dressing over the rice and serve.
