Raspberry & Grapefruit Gin Spritz

Ingredients

• 35.5ml Bombay Sapphire
• 10ml Raspberry Puree/Syrup
• 100ml Grapefruit Sparkling Drink
• 1 Lemon Wedge
• 180 ml Hot Water
• 150 g Sugar
• 170 g Raspberries

Method

1. Add Bombay Sapphire, raspberry puree / syrup and sparkling grapefruit to a large wine glass filled with cubed ice and stir gently to combine. Squeeze in the juice of 1 large lemon wedge and use this then to garnish.

Raspberry Syrup

1. In a small saucepan, combine sugar and water. Stir over heat until sugar is completely dissolved.
2. In a medium jar, lightly crush raspberries.
3. Pour some syrup over the raspberries in the jar.
4. Seal the jar and steep in the fridge for up to 24 hours.
5. Strain the syrup with a fine mesh strainer once steeping is complete.
