½ tsp baking powder
½ tsp bicarbonate of soda
1 tsp vanilla extract
125ml milk

Ingredients
- 125g plain flour
- ½ tsp baking powder
- ½ tsp bicarbonate of soda
- 1 tsp vanilla extract
- 125ml milk
- 3 eggs
To serve, your choice of a selection of:
- Squirty cream
- Mixed berries, chopped
- Chocolate hazelnut spread

Method
- Combine the flour, baking powder, and bicarbonate of soda in a bowl.
- Whisk the vanilla, milk, and eggs together in a separate jug.
- Pour the wet mixture over the dry ingredients, whisking to combine. It’s fine if there are a few lumps in the batter; avoid over-whisking.
- Heat a little oil in a non-stick pan over medium heat.
- Spoon in a small ladle of batter and spread out into a taco-sized circle.
- Cook for about 2 minutes until little bubbles appear on the surface, then flip and cook for another 1-2 minutes until cooked through.
- Repeat until all the batter is used up.
- Fill the pancakes with your desired toppings along the centre.
- Fold each side in to form a ‘taco’ shape—it's easiest to do this while holding it in your hand.
- Serve immediately and enjoy!
