Irish Basil Smash

30ml lime juice, plus slices of lime to serve
25ml simple syrup (see method to make your own)
Handful of fresh basil leaves, plus extra to serve
Handful of fresh mint leaves, plus extra to serve
60ml Drumshanbo Irish Gin (Or any other Irish Gin)
Tonic water or soda, to top

- 25ml simple syrup
- Handful of fresh basil leaves, plus extra to serve
- Handful of fresh mint leaves, plus extra to serve
- 60ml Drumshanbo Irish Gin
- Tonic water or soda, to top
- Slices of lime, to serve
Method
- Muddle the lime juice, sugar syrup, and fresh herbs in the bottom of a small tumbler glass.
- Add the gin and stir, then tumble in ice to fill the glass.
- Top with tonic and garnish with a lime wheel and some fresh herbs.
Tip: For a quick and easy simple syrup, combine equal parts sugar and water in a saucepan, bring to a boil, and stir until the sugar dissolves. Let it cool before using, and store in the fridge for up to two weeks.
