Ingredients

  • 3 Superquinn sausages
  • 4 Superquinn unsmoked rashers
  • 4 slices SuperValu Signature Tastes black or white pudding, cut into rounds
  • 2 SuperValu Signature Tastes Corn Fed eggs
  • 2 floury rolls
  • Butter, for spreading
  • Relish of choice

Method

  1. Place a pan over a medium heat and add a little oil. Add the sausages and cook for a few minutes until lightly golden then add in the bacon and cook for a further 6 - 8 minutes until the sausages and bacon are cooked through and golden.
  2. Add the pudding slices to the pan and continue to cook everything for a couple of minutes until everything is done to your liking.
  3. Remove the sausages, bacon and pudding from the pan and crack 2 eggs into the same pan, seasoning with salt and pepper. Allow to fry for a few minutes whilst you assemble your roll.
  4. Butter your floury roll and add relish if you fancy then divide the sausages, bacon and pudding between the 2 rolls. Top each with your fried egg then add the lid and more relish if you’d like.
  5. Enjoy with a comforting cup of tea.
