Ingredients
1 SuperValu Signature Tastes Irish Hereford Beef Wellington
1 Egg wash, made of 1 yolk combined with 1 tsp milk
300g SuperValu Signature Tastes Tenderstem Broccoli
50g Butter, diced
1 Onion, thinly sliced
50ml White wine or 50ml veg stock
40g Parsley
Salt & Pepper, to season

Directions
  1. Preheat oven to 180ËšC.
  2. Place the Beef Wellington on a roasting tray lined with parchment paper.
  3. Follow the packaging instructions to cook, and then remove from oven let it rest for 5 minutes. Before cooking, you can brush with egg wash to give the pastry an extra golden color.
  4. While that is resting, melt the butter in a large pan, add the onion and cook for 90 seconds over medium heat, until just softened.
  5. Add the tenderstem broccoli, add the white wine or stock and season.
  6. Sauté for a further 2-3 minutes until the broccoli is cooked through. Remove from the heat and transfer to a serving dish, sprinkling with parsley.
  7. Carve the Beef Wellington and serve with broccoli and your favorite sides.
