Origin: This Sauvignon Blanc was hand harvested during March, after a long ripening season in the Leyda Valley, just 8 kms from the Pacific Ocean. The sea's influence and the vineyard's location on the edge of the Maipo river allows for such a slow ripening process with natural breezes and low temperatures originating in the west. Winemaking: 100% hand harvested grapes that are later transported to the cellar to go through a whole cluster press. Fermentation takes place with selected yeast at low temperatures (11-13 °C) in order to preserve the grapes' freshness. No oak is used in any part of the winemaking process. Tasting Notes: This wine stands out for its intense aromas of asparagus and peas offset by herbal undertones. In the mouth, it is crisp and fresh, with a strong acidity and long finish, resulting in a perfectly balanced wine.

Cloudy Bay Sauvignon Blanc (75 cl), €35.00
The freerun juice was cold settled, before racking and inoculation with selected yeast. Fermentation was carried out primarily in stainless steel tanks, with around 1.5% of the blend fermented at warmer temperatures in large format oak vats. A portion was also fermented using wild yeast to build texture and complexity. As usual, our Sauvignon Blanc was blended stringently to include only the best; in 2024 we tasted 81 different portions, of which 55 were selected to create the final blend.

Tasting Notes: This wine is citrus-forward with undertones of biscotti and nuts. On the palate the acidity is surprisingly racy, but a subtle sweetness prevents it from being overpowering. The flavors are primarily fruity with hints of sweet oak flavors. A layered wine with a crisp finish. 15% Matured in New French Oak barrels for 6 months.

Gavi DOCG is a wine made with Cortese grapes from vineyards located in a limited production area where the marly-limestone soils and peculiar microclimate contribute to its fragrance. The color is straw yellow with greenish hues, a delicate, fruity, fresh fragrance with hints of white flowers and a dry taste, with pleasant acidity, harmonious and well balanced.

Willow Hill Chardonnay (75 cl), €7.99
The Chardonnay grapes are harvested early in the morning while they are still cool. This Chardonnay is in its purest form, unoaked and allowed to express itself as the classic grape it is. The result is a full-bodied wine with aromas of rich tropical fruit. The palate is lively and round with fresh apple, citrus and pear flavours in abundance, giving a crisp medium dry finish. Great all around wine, superb on its own or perfect with creamy pasta dishes. Serve well chilled as an aperitif. Enjoy.
