This quintessential Irish whiskey is distilled with unmalted barley grown on our family farm and triple distilled in copper pot stills. Matured at our Atlantic Ocean warehouse in ex-Bourbon, Oloroso and Amontillado Sherry casks, capturing the essence of our coastal heritage. Nose: Vanilla sweetness leads to hints of demerara sugar, citrus peel and kiwi. Taste: Vanilla, caramelised pear and apple, gives way to a gentle wood spice, dark chocolate and orange. St Kevin, the man on our bottle, stood apart. This whisk does the same. It has sucked the marrow out of two casks. An American bourbon barrel gives sweet, toasted vanilla notes. A Spanish Oloroso Sherry barrel adds hints of dark, dried fruit. Non-chill-filtered for truer character.

St Kevin, the man on the bottle, stood apart. This gin does the same. We sustainably forage what grows wild in the mountains around our distillery. It goes fresh into the still that very day, making for a beautifully balanced, deeply layered, terroir inspired gin. Botanical oils may cloud when mixed - that's a good thing!
