Our Signature Tastes Pure Royal Smoked Salmon Fillet comes from the most premium part of the salmon, the loin. It is naturally smoked over bourbon whiskey chips and gently infused with bourbon whiskey to give a smooth finish and perfect balance of smoke and flavour. Our smoked salmon comes from Ireland's oldest seafood company Dunn's of Dublin. A family business established in 1822, currently run by the Ecock family. Dunn's use only the finest ingredients to produce our signature tastes whiskey infused royal smoked salmon fillet. For a distinctly delicate whiskey flavour, the salmon are hand-salted and naturally smoked over bourbon whiskey chips for a minimum of 10 hours before each side is lightly infused in bourbon whiskey and expertly trimmed and packed.

We have been producing high quality smoked fish products in our artisan smokehouse for the past 30 years. We pride ourselves in having the finest mackerel in the South West. The mackerel which is caught off the crystal clear waters of the west coast of Ireland is hand filleted, cured using natural salt and hot smoked in our 30 year old smoking machines using pure oak chipping for 4 hours giving the mackerel its world renowned flavour.
