Union Hall Smoked Fish is a family business run by the Nolan family, situated in the fishing village of Union Hall. We have been producing high quality smoked fish products in our artisan smokehouse for the past 30 years. We pride ourselves in having the finest salmon in the South West. The salmon we use is always of the highest standard and smoked in a centuries old manner. Firstly the salmon is hand filleted, cured using natural salt and cold smoked over our smouldering oak woodchips for 12 to 14 hours giving the salmon its world renowned flavour.

Our organic Irish salmon is farmed to the highest certified organic standards, in Irish Atlantic coastal waters. For a distinctly delicate flavour, sides of salmon are traditionally hand-salted and naturally smoked over applewood chips for a minimum of 10 hours. The mackerel which is caught off the crystal clear waters of the west coast of Ireland is hand filleted, cured using natural salt and hot smoked in our 30 year old smoking machines using pure oak chipping for 4 hours giving the mackerel its world renowned flavour.

The Salmon is brined in a mixture of Salt and Whiskey, Cold Smoked over our smoldering oak woodchips for 12 to 14 hours and finally topped with black pepper and drill to give the Smoked Salmon that unique flavour with a hint of West Cork Whiskey.
