Ingredients
220g mixed dried fruit
150ml cold tea
50ml rum, brandy or whiskey (optional)
220g Self-raising flour sieved
½ tsp cinnamon
110g Caster Sugar
1 egg beaten
2 tbsp marmalade
25g butter
Zest of 1 orange
Zest of ½ lemon
1 tsp vanilla essence

  • 150ml cold tea

  • 220g Self-raising flour, sieved
  • ½ tsp cinnamon
  • 110g Caster Sugar
  • 1 egg, beaten
  • 2 tbsp marmalade
  • 25g butter
  • Zest of 1 orange
  • Zest of ½ lemon
  • 1 tsp vanilla essence

Method

  1. Preheat oven to 200C, 180C fan, Gas 4
  2. Line a 2lb loaf tin
  3. Soak the fruit in the tea and alcohol if using overnight or for at least a few hours
  4. The fruit will swell up and absorb the liquids
  5. Melt the butter and marmalade in a saucepan
  6. Add the flour, cinnamon, caster sugar, egg, butter, marmalade, orange zest, lemon zest and vanilla essence into a large bowl and mix the ingredients
  7. Add the fruit and the liquid it soaked in to the dry mixture and combine everything well
  8. Spoon the mixture into the loaf tin and bake for 1 hour
  9. Cover the top after 40 minutes with tin foil to prevent top over-browning
