Salmon Parcels with New Potatoes, Seasonal Vegetables, and Lemon Garlic Butter

Ingredients
4 SuperValu salmon fillets (skinless, boneless)
4 handfuls green beans, topped
4 handfuls cherry tomatoes, halved
600g new potatoes
Olive oil
sea salt
black pepper
1 lemon (juiced and sliced)
30g butter
4 cloves garlic, minced
Handful of fresh parsley, chopped

Ingredients

For the salmon parcels:

  • 4 SuperValu salmon fillets (skinless, boneless)
  • 4 handfuls green beans, topped
  • 4 handfuls cherry tomatoes, halved

For the potatoes:

  • 600g new potatoes
  • Olive oil, sea salt, and black pepper
  • 1 lemon (juiced and sliced)

For the lemon garlic butter:

  • 30g butter
  • 4 cloves garlic, minced
  • Handful of fresh parsley, chopped

Method

  1. Preheat and boil potatoes:
    • Preheat oven to 200°C / Gas 6.
    • Boil new potatoes in salted water for 10–15 minutes, or until tender.
    • Drain and season with salt and pepper.
  2. Assemble salmon parcels:
    • Place one salmon fillet on a large rectangle of foil or baking parchment.
    • Arrange a handful each of green beans and cherry tomatoes around the salmon.
    • Top each fillet with 1 tsp butter and a lemon slice.
  3. Make lemon garlic butter:
    • In a small saucepan, melt the remaining butter.
    • Add minced garlic and lemon juice; cook for 1 minute.
    • Stir in 1 tbsp of chopped parsley.
  4. Bake parcels:
    • Tightly seal each parcel to trap steam and place on a baking tray.
    • Bake for 15–20 minutes, until the salmon is flaky and cooked through.
  5. Serve:
    • Open the parcels and serve the salmon and vegetables alongside the new potatoes.
    • Drizzle with garlic butter and garnish with fresh parsley.
