Ingredients
500g SuperValu Irish brussels sprouts, trimmed and halved
2 tsps extra virgin olive oil
Salt
Black pepper
60g prosciutto slices
1 tbsp maple syrup
1/4 cup breadcrumbs
zest from half a lemon
80g parmesan (for topping)
Directions
  1. Pre heat your oven to 180C and prepare a large baking sheet with parchment paper. 
  2. In a large mixing bowl, combine the brussels sprouts with olive oil, salt, and pepper. Spread them out on the baking sheet, ensuring they are not too close to each other. 
  3. Arrange the prosciutto slices on the same tray next to the brussels sprouts if there is enough space. Place the tray in the oven and bake for 10 to 12 minutes, or until the prosciutto turns crispy. 
  4. Take out the prosciutto and let it cool. Put the baking sheet back in the oven for another 10 to 12 minutes. After removing the tray, drizzle the brussels sprouts with maple syrup and bake for an additional 2 to 3 minutes until they are crispy. 
  5. Once the prosciutto has cooled, chop it and place it in a small bowl. 
  6. Heat a small amount of oil over medium-low heat. Add the breadcrumbs and toast , stirring frequently, until it becomes golden. Remove the pan from the heat, mix in the lemon zest, and set aside. 
  7. Transfer the sprouts to a large serving dish and top with the chopped crispy prosciutto and breadcrumbs. Grate the parmesan on top and season with flaky salt and pepper. Serve and enjoy!
