Buffalo Chicken & Halloumi Stuffed Pittas

85g shredded cooked chicken breast
SuperValu Halloumi cheese
1 small pepper, diced
2 scallions, finely sliced
3 tbsp mayonnaise
Shredded crisp lettuce leaves

- 85g shredded cooked chicken breast
- SuperValu Halloumi cheese, grated
- 1 small pepper, diced
- 2 scallions, finely sliced
- 3 tbsp mayonnaise
- 4 tbsp Signature Tastes Buffalo sauce
- Shredded crisp lettuce leaves
- Salt and pepper, to taste
Method
- Preheat oven or air fryer:
- Preheat to 200°C (180°C fan) / Gas 6.
- Prepare the filling:
- In a bowl, combine shredded chicken, diced pepper, grated halloumi, sliced scallions, and mayonnaise.
- Season with salt and pepper.
- Add 2 tbsp Buffalo sauce and mix well.
- Stuff the pittas:
- Slice each pitta along one edge to create a pocket.
- Spoon the filling evenly into each pitta, gently pressing to fill.
- Bake:
- Place stuffed pittas on a baking tray.
- Bake for 10–12 minutes, until cheese is melted and pittas are golden.
- Finish and serve:
- Let the pittas cool slightly, then tuck in shredded lettuce.
- Drizzle with remaining Buffalo sauce before serving.
