Black Tiger Prawn Tacos

Ingredients
1 tsp olive oil
1 pack SuperValu Signature Tastes Black Tiger Prawns
150g red cabbage, shredded
1 carrot, grated
1 onion, sliced
1 lemon
2 tbsp mayonnaise
8 soft tortillas
100ml sour cream
2 tbsp coriander, chopped
¼ iceberg lettuce, shredded
40g rocket leaves
4 tbsp SuperValu Signature Tastes Fire Roasted Pepper Relish
100g grated cheese

1 red chilli, chopped

- 1 pack Signature Tastes Pil Pil King Prawns
- 150g red cabbage, shredded
- 1 carrot, grated
- 1 onion, sliced
- 1 lemon, for juicing
- 2 tbsp mayonnaise
- 8 soft tortillas
- 100ml sour cream
- 2 tbsp coriander, chopped
- ¼ iceberg lettuce, shredded
- 40g rocket leaves
- 4 tbsp Signature Tastes Fire Roasted Pepper Relish
- 100g grated cheese
- Salt & pepper
- 2 garlic cloves, chopped
- 1 red chilli, chopped
Method
- In a bowl, combine the red cabbage, grated carrot, chopped onion, half lemon juice, and mayonnaise and stir. Keep covered.
- Pre-heat a non-stick frying pan over high heat. Sprinkle some salt over the hot dry pan. Add the prawns and sear for a minute or so.
- Season and add the slices of garlic and chilli to the pan. Fry for a further minute or so and add a squeeze of lemon juice over the prawns. Remove from the heat and set aside.
- Warm the tortillas in a pan and place them on a serving board with the salad leaves, red cabbage slaw, sour cream, roasted red pepper relish and cheese.
- Let the family build their tacos using the tortillas, sour cream, coleslaw, prawns, lettuce, grated cheese and relish. Serve and enjoy immediately.
