Ingredients
115g Cottage cheese
1 Egg
40g Plain flour
½ tsp Baking powder
2 tbsp Signature Tastes Pesto Rosso
75g Mozzarella, grated
4 - 6 Cherry tomatoes, sliced
A few basil leaves, to garnish
Signature Tastes parmesan, grated, to garnish
Directions

Ingredients

  • 115g cottage cheese
  • 1 egg
  • 40g plain flour
  • ½ tsp baking powder
  • 2 tbsp Signature Tastes Pesto Rosso
  • 75g mozzarella, grated
  • 4 - 6 cherry tomatoes, sliced
  • a few basil leaves, to garnish
  • Signature Tastes parmesan, grated, to garnish

Method

  1. Pre-heat the oven to 190 C /170 C fan.
  2. In a bowl, whisk together the cottage cheese and egg then sprinkle over the flour and baking powder on top and mix well to combine.
  3. Pour the mixture out onto a baking tray lined with baking paper, spreading it out into a roughly 8-inch circle and bake for 20-25 minutes until golden.
  4. Remove the tray from the oven and turn the oven up to 210 C / 190 C fan.
  5. Spread the cooked base with the pesto rosso and sprinkle with the cheese then return to the oven to bake for 5-8 minutes more.
  6. Top with sliced tomatoes, basil leaves & grated parmesan then slice, and enjoy!
