Ingredients
320g white chocolate, plus 20g for decoration
2 tbsp coconut oil
70g Rice Krispies
40g marshmallows
4 tbsp Biscoff Spread (melted; you can also use peanut butter or Nutella)"

2 tbsp desiccated coconut

Directions
  1. In a large glass or metal bowl, combine the white chocolate and coconut oil. Melt in the microwave or over a simmering saucepan of water until smooth.
  2. Pour 50g of the melted chocolate into silicone moulds and swirl around to coat them completely. Refrigerate until set.
  3. In a separate bowl, combine the Rice Krispies and marshmallows with 200g of the melted chocolate.
  4. Place this bowl in a hot oven at 200°C (180°C fan, gas mark 4) for 3-4 minutes to melt the marshmallows, creating a gooey texture.
  5. Spoon the mixture into the prepared moulds, filling them about ¾ full. Add 1 teaspoon of Biscoff spread on top of each.
  6. Pour the remaining melted milk chocolate over the mixture in the moulds. Refrigerate until fully set.
  7. To decorate, use a little melted milk chocolate to attach the edible eyes and red Smarties as noses. Brush a bit of melted chocolate around the top and sprinkle with desiccated coconut for a snowy effect.
