Ingredients
300ml cream
100ml milk
Salt
white pepper
4 SuperValu free-range eggs
75g Cheddar cheese, grated
80g Brie, chopped
250g chopped ham
100g chopped roasted vegetables
100g chopped scallions
A pinch of nutmeg
2 sheets of puff pastry
Directions
- Preheat the oven to 180°C.
- In a mixing bowl, whisk together the cream, milk, and eggs. Season with salt, white pepper, and a pinch of nutmeg.
- In a separate bowl, combine the grated cheddar, brie, chopped ham, roasted vegetables and scallions.
- Line a quiche dish or tart tin with the puff pastry. Add the filling mixture, then pour the egg mixture on top.
- Bake in the preheated oven for 35 minutes, or until the quiche is set and golden.
- Serve warm with a rocket salad and cranberry sauce.
