Located on the fringe of Europe, Dingle enjoys a pristine environment like no other. Buffeted by winds from the Atlantic Ocean, the air is fresh, just like our Gin. Using our own hand beaten copper still, fondly known as Oisín, spirit vapour passes through our flavour basket to capture the unique character of nine traditional and locally grown & harvested juniper, fuschia, bog myrtle heater, chervil, hawthorn, angelica and coriander. The resulting distillate is cut with pure water drawn from our well 240 feet below our distillery. Each bottle is then hand filled and numbered by batch. Locally grown and harvested botanical include: Rowan Berry, Juniper, Fuschia, Bog Myrtle, Heather, Chervil, Hawthorn, Angelica, Coriander Tasting notes: You are greeted with a beautiful floral aroma on the nose followed by a warmth from the juniper berries. The small town of Dingle lies on the extreme edge of Europe. Beyond our distillery, there's nothing but the Atlantic Ocean stretching for almost four thousand miles. But our whiskey is about more than just geography. It is distilled at the edge, made and then slowly nurtured, all by hand. It's a whiskey with a true sense of place. And our distillate is hand-cut, meaning that our head distiller makes the cut from heads to heart and tail by eye, nose and, of course, hand. Before bottling we adjust the strength of our whiskey to 46.3% using the purest drawn water from our own well, 240 feet deep below us. This is just the final process which we do entirely manually. From the time the grist and that same pure water meet in the mash tun, adjusting the temperature of the wort, making the spirit cuts to filling the casks, everything is done by hand. All the senses work in harmony as we create Dingle Single Malt Irish Whiskey. Dingle's unique microclimate - mild, coastal, with plenty of gentle humidity - endows this whiskey with its sense of place. World's Oldest Licensed Whiskey Distillery Found on County Antrim's rugged coastline, the village of Bushmills is home to the world's oldest licensed whiskey distillery. Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction - the Giant's Causeway.
