Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction - the Giant's Causeway. Bushmills is more than just a whiskey. It's a village, where family, friends and neighbours work side by side at the distillery. As we often say, "without the village, there would be no whiskey and without the whiskey, there would be no village".

A unique whiskey with a perfect balance of spicy, nutty and vanilla notes with hints of sweet sherry.

Famed throughout his native county Cork for buying rounds of his favourite tipple, he became so synonymous with the whiskey he sold, that in 1913 the distillery owners paid him the ultimate tribute by renaming the whiskey 'Paddy' in his honour. One taste of Paddy will reveal the mild, distinctive cereal maltiness, and delicately sweet floral flavours with subtle background notes of spiced vanilla and butterscotch. The finish is gentle, spicy, and dry with more mellow malts, black pepper and a lingering woodiness reminiscent of its time in oak.

The small town of Dingle lies on the extreme edge of Europe. Beyond our distillery, there's nothing but the Atlantic Ocean stretching for almost four thousand miles. But our whiskey is about more than just geography. It is distilled at the edge, made and then slowly nurtured, all by hand. It's a whiskey with a true sense of place. And our distillate is hand-cut, meaning that our head distiller makes the cut from heads to heart and tail by eye, nose and, of course, hand. Before bottling we adjust the strength of our whiskey to 46.3% using the purest drawn water from our own well, 240 feet deep below us. This is just the final process which we do entirely manually. From the time the grist and that same pure water meet in the mash tun, adjusting the temperature of the wort, making the spirit cuts to filling the casks, everything is done by hand. All the senses work in harmony as we create Dingle Single Malt Irish Whiskey. Dingle's unique microclimate - mild, coastal, with plenty of gentle humidity - endows this whiskey with its sense of place.
