Dingle Single Malt (70 cl), €50.00

The small town of Dingle lies on the extreme edge of Europe. Beyond our distillery, there's nothing but the Atlantic Ocean stretching for almost four thousand miles. But our whiskey is about more than just geography. It is distilled at the edge, made and then slowly nurtured, all by hand. It's a whiskey with a true sense of place. And our distillate is hand-cut, meaning that our head distiller makes the cut from heads to heart and tail by eye, nose and, of course, hand. Before bottling we adjust the strength of our whiskey to 46.3% using the purest drawn water from our own well, 240 feet deep below us. This is just the final process which we do entirely manually. From the time the grist and that same pure water meet in the mash tun, adjusting the temperature of the wort, making the spirit cuts to filling the casks, everything is done by hand. All the senses work in harmony as we create Dingle Single Malt Irish Whiskey. Dingle's unique microclimate - mild, coastal, with plenty of gentle humidity - endows this whiskey with its sense of place. Dingle is where it is distilled, where it is matured, where it gradually evolves into the distinctive spirit you are holding right now, a whisky that knows exactly where it comes from. A whisky cut from the landscape. Purity, Place, Depth Dingle Single Malt Whisky is cut by hand using the purest water, drawn from our own well right below the distillery, 240 feet deep.

Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction - the Giant's Causeway. Bushmills is more than just a whiskey. It's a village, where family, friends and neighbours work side by side at the distillery. As we often say, "without the village, there would be no whiskey and without the whiskey, there would be no village".
