Detox Red Lentil Soup with Mutti's Tomato Polpa
Ingredients:
Polpa Finely Chopped Tomatoes 400g
Red lentils (hulled) 250g
1 onion
1 celery stalk
2 carrots
1 fresh ginger
1 teaspoon of turmeric
4 cups of water
1 heaping teaspoon of Coarse salt
Method:
Peel and chop the carrots and onion. Use a vegetable peeler to remove some strips from the celery stalk to eliminate the fibrous parts, then chop it.
Place the chopped vegetables in a large pot, add 4 cups of water, and season with salt. Cover with a lid and cook for 20 minutes.
Rinse the red lentils thoroughly and drain them. Add the lentils and Mutti Polpa to the pot, then continue cooking for an additional 40 minutes.
Once cooked, grate the ginger and add it along with the turmeric. Blend the soup with an immersion blender until smooth.
Serve with your favorite fresh herbs for garnish. We’ve used chives and thyme for a fragrant touch.
