So, when a local craft brewer borrowed our casks to age their fine Irish stout, it gave us an idea; why not finish our own Jameson in the stout-seasoned oak barrels? The Dublin Liberties Copper Alley Irish Whiskey is a non-chill-filtered 46% Single malt Irish Whiskey, aged for over 10 years in Bourbon casks and finished in Sweet Oloroso Sherry casks. It takes its name from the Liberties area of Dublin, a riotous quarter of the city known as ‘Hell' in the 1700s. By Day, Copper Alley in the heart of the Dublin Liberties rang to the cries of hawkers and tradesmen, tanners and merchants. By night, the pick pockets and cut throats plied their busy trade on these streets.

After endless exploration and small batch distillations in the micro distillery, Midleton, 16 eclectic botanicals, including black lemon & Irish gorse flower, came together to form a gin filled with clean character and a hint of chaos. Juniper berries, sweet & bitter orange peel, black lemon, lemon peel & lemon verbena, coriander, cardamom & caraway seeds, ginger, nutmeg, cassia bark, lavender, basil & bay leaves and Irish gorse flower.

This release asked the question: How will virgin Spanish oak affect a light single grain whiskey?
