1tsp Vanilla extract
350g Flour
1 tsp Baking powder
1 tsp Baking soda
125ml Double cream
250g Cream cheese
2 Leaves gelatine

  • 375g Sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 350g Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 125ml Double cream
  • 250g Cream cheese
  • 2 Leaves gelatine
  • Red berry coulis

Method

  1. Make the cookie dough: In a mixing bowl, combine butter and sugar (300g). Mix until smooth.
  2. Add 1 egg and 1 tsp vanilla extract. Mix again.
  3. Add flour, 1 tsp baking powder, and 1 tsp baking soda. Mix until dough forms.
  4. Fill the ramekins: Fill 2 ramekins ¾ full with the cookie dough. (Tip: make cookies with the leftover dough).
  5. Bake the cookie bases: Place the ramekins in the air fryer and bake at 180°C for 10 minutes.
  6. Prepare the cheesecake filling: In a bowl, combine double cream, cream cheese, and sugar. Mix until smooth.
  7. Add the 2 softened gelatine leaves and mix again until fully combined.
  8. Assemble the cheesecake: Once the cookie bases are baked, press down gently (with a cylinder or spoon) to create space for the filling.
  9. Pour the cheesecake mixture into each ramekin, filling to the top.
  10. Pipe small dots of red berry coulis on the surface. Using a toothpick, drag through each coulis dot to form heart shapes.
  11. Refrigerate the ramekins for 3 hours until fully set.
