Ingredients
1 SuperValu Signature Tastes Turkey Parcel 1.8kg
2 tbsp SuperValu Signature Tastes Seville Marmalade
2 carrots, chopped
2 onions, chopped
4 garlic cloves, sliced
4 sprigs rosemary
3 sprigs sage
300g chicken wings
2 tbsp honey
1 tbsp flour, or corn flour
100ml red wine, optional
600ml chicken stock
1 stick cinnamon
1 tsp mixed spices, or more to taste
2 tbsp butter
Salt & pepper
Directions
  1. Preheat the oven to 180°C.
  2. Place the carrots, onion, garlic, rosemary, sage, and chicken wings on a roasting tray. Add the turkey parcel, spread half of the marmalade and honey over the turkey, and season with salt and pepper, then roast for 1 hour 30 mins until cooked through, ensuring the juices run clear.
  3. Remove the turkey from the roasting tray and set aside to settle covered with a tent of foil.
  4. Meanwhile, place the roasting tray back on the hob over medium heat and prepare the gravy.
  5. Sprinkle some flour over the vegetables and chicken wings and cook for 40 seconds.
  6. Add the red wine, spices, and chicken stock and stir to catch all the caramelized flavor from the roasting tray. Simmer for 2 minutes and pass through a sieve into a small saucepan.
  7. Stir in the rest of the marmalade and honey if needed. Simmer on low heat for 4 minutes to infuse the spices. Remove from the heat and whisk in the butter to finish. Check the seasoning and keep warm. Carve the turkey parcel and serve with the mulled wine gravy.
  8. Enjoy with your favorite sides and vegetables.
