Totally Tasty Egg Noodle Bowl

Ingredients
500g SuperValu pork mince
30ml SuperValu hoisin sauce
1 grated apple
25ml toasted sesame oil
20ml SuperValu honey
30ml SuperValu dark soy sauce
5g minced garlic
5g minced ginger
1 packet SuperValu chestnut mushrooms, chopped
3 freshly grated carrots
100g green beans, blanched and drained
70g frozen SuperValu peas
1 bunch pak choi, chopped into chunky pieces
35g toasted sesame seeds
20ml vegetable oil
2 packets SuperValu egg noodles
4 free-range SuperValu eggs

- 500g SuperValu pork mince
- 30ml SuperValu hoisin sauce
- 1 grated apple
- 25ml toasted sesame oil
- 20ml SuperValu honey
- 30ml SuperValu dark soy sauce
- 5g minced garlic
- 5g minced ginger
- 1 packet SuperValu chestnut mushrooms, chopped
- 3 freshly grated carrots
- 100g green beans, blanched and drained
- 70g frozen SuperValu peas
- 1 bunch pak choi, chopped into chunky pieces
- 35g toasted sesame seeds
- 20ml vegetable oil
- 2 packets SuperValu egg noodles
- 4 free-range SuperValu eggs
Method
- Prep the Vegetables: Blanch the green beans and peas, then drain. Chop the pak choi and set aside.
- Cook the Mushrooms: Heat a pan over medium-high heat with vegetable oil. Fry the mushrooms with salt and white pepper until crispy. Add the peas, beans, and pak choi to the pan and stir-fry for a few minutes.
- Toast the Sesame Seeds: In a separate dry pan, toast the sesame seeds until golden brown. Set aside
- Cook the Pork: In a hot pan, cook the pork mince until brown and crispy.
- Cook the Noodles and Eggs: Prepare the egg noodles according to package instructions. While the noodles cook, fry the eggs sunny-side up in a separate pan.
- Assemble the Bowls: In a family sharing large bowl, divide the noodles, vegetables, pork mince, and grated carrots into four sections. Sprinkle with toasted sesame seeds.
