Spaghetti with Lemon, Garlic, Parsley, and Chilli

400g Dried SuperValu spaghetti
80ml Extra virgin olive oil
4 Garlic cloves, finely chopped & 1 Clove garlic for the garlic bread
4 Shallots, finely chopped
1 Fresh chilli, chopped
1 Lemon, juiced
60ml Dry white wine
35g Flat-leaf parsley, chopped
50g Finely grated parmesan & Grated parmesan to garnish
1 SuperValu baguette
3 tbsp Butter, softened

- 400g dried SuperValu Spaghetti
- 80ml extra virgin olive oil
- 4 garlic cloves, finely chopped
- 4 shallots, finely chopped
- 1 fresh chilli, chopped
- 1 lemon, juiced
- 60ml dry white wine
- 35g flat-leaf parsley, chopped
- 50g finely grated parmesan
- Sea salt and pepper, to taste
Garlic Bread
- 1 SuperValu baguette
- 1 clove garlic
- 3 tbsp butter, softened
- Grated parmesan
Method
- Cook spaghetti al dente.
- Sauté garlic, shallots, and chilli in olive oil.
- Add wine, and boil.
- Toss spaghetti with parmesan, lemon, and parsley.
- Season.
Garlic Bread
- Combine butter and garlic.
- Slice baguette, spread with butter, and sprinkle with parmesan.
- Bake at 180°C for 6-8 minutes.
