Baked Salmon in Puff Pastry
Salmon and puff pastry were simply made for each other! Serve with a mixed green salad dressed with a little olive oil and lemon juice.

Baked Salmon in Puff Pastry

Ingredients
1 - Fresh Egg lightly beaten
100 g Garlic Butter (shop-bought), chilled
1 tbsp Plain Flour for dusting
500 g Puff Pastry thawed
50 g Sundried Tomato Pesto
4 - SuperValu Fresh Salmon Fillets (approx. 100g each)
4 portions Salad Greens
Directions
- Preheat the oven to 200°C/gas mark 6. Line a baking tray with non-stick baking paper.
- Roll out the puff pastry on a lightly floured surface and cut into four equal squares. Spread the pesto over each square, then place the salmon on top. Divide the garlic butter evenly between all four squares and place on top of the salmon. Brush the edges of the pastry with a little beaten egg and seal well.
- Place the puff pastry parcels on the lined baking tray and bake in the oven for 35 minutes, until the pastry is golden brown and the salmon is piping hot. Serve with a green salad on the side.
