Chicken Curry

Chicken Fillets

Directions
- Thinly slice your vegetables of choice. Add them to a large oiled pan over a medium heat and cook for 3 - 4 minutes.
- Dice the chicken breasts and add them to the pan along with the curry powder. If the pan gets dry, add a splash of water to ensure that the vegetables don’t burn
- After 5 minutes add 250ml of water and bring to the boil. Reduce to a low heat and cook for 10 - 15 minutes until the chicken is cooked through.
- While the chicken is cooking boil the rice. Take the curry off the heat, stir in some natural yogurt and season to your liking. Serve the chicken curry on a bed of rice.
