Cauliflower Steaks

Cauliflower Steaks

Ingredients
1 medium cauliflower
1 tbsp olive oil
2 tbsp of lovely basil pesto
1 tbsp tahini
Juice of ½ a lemon
2 cloves garlic, minced
1 tbsp fresh parsley
Black pepper
Directions
- Preheat your air fryer to 190°C.
- Remove the outer leaves from the cauliflower and trim the stem end to create a flat base.
- Slice the cauliflower vertically into 2-inch steaks. You should get 2-3 steaks depending on the size of the cauliflower.
- Brush both sides of each cauliflower steak with olive oil and season with salt and pepper.
- Place the cauliflower steaks in the air fryer basket in a single layer and cook for 20-25 minutes, flipping halfway through, or until the cauliflower is tender and golden brown on both sides.
- While that’s cooking, in a small bowl, mix the tahini, lemon juice, garlic, and parsley until smooth. If the dressing is too thick, add water, one tablespoon at a time, until it reaches your desired consistency. The dressing should be pourable but not too runny.
- Once the cauliflower steaks are cooked, transfer them to a serving plate, smear on the pesto, then drizzle the tahini lemon dressing on top, and garnish with some freshly cracked black pepper.
