Slow Cooked Balsamic and Honey Glazed Roast Beef

Ingredients
1kg SuperValu Fresh Irish Housekeeper's Cut, cut into chunks
2 tbsp olive oil
1 onion, finely sliced
1 carrot, finely sliced
2 cloves garlic, chopped
500ml beef stock or cider
100ml Signature Tastes Balsamic Vinegar
75ml SuperValu Soy Sauce
150g Signature Tastes Ketchup
150g SuperValu honey
2 tsp tomato paste
1 tbsp Dijon mustard
1 tsp smoked paprika
Pinch of chilli flakes
1 pack of cooked beetroot,quartered
1 Signature Tastes Mashed Potato
Scallions, sliced (for garnish)
Salt

Directions
- In a slow cooker bowl, whisk together balsamic vinegar, soy sauce, ketchup, honey, mustard, tomato paste, paprika, chilli flakes, and salt. Add beef and coat well. Cover and marinate at least 30 minutes (or overnight for richer flavour).
- Heat olive oil in a pan over high heat. Sear beef in batches until browned. Transfer to slow cooker.
- Sauté onion and carrot in the same pan for 2-3 minutes. Add beef stock and bring to a simmer. Pour over beef in slow cooker. Cover and cook on LOW for 7 hours, or until beef is fork-tender.
- Remove beef and shred with forks. Strain slow cooker liquid into a saucepan. Simmer sauce over medium heat for 5-8 minutes until thickened.
- Serve: Combine shredded beef with enough sauce for desired consistency. Serve with mashed potatoes, roasted beetroot (toss with leftover sauce and roast for 10-15 minutes at 200°C), and garnish with scallions.
