Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction - the Giant's Causeway. Bushmills is more than just a whiskey. It's a village, where family, friends and neighbours work side by side at the distillery. As we often say, "without the village, there would be no whiskey and without the whiskey, there would be no village".

Handcrafted in Small Batches Inspired by the lush Italian gardens of Garnish Island Co. Cork, this classic gin is the creation of Master Distiller Deirdre Bohane. It offers light floral notes of hibiscus, iris and rose which marry beautifully with rosemary and thyme. This is then complemented by luscious hints of dark chocolate and strawberry. Sprung from the minds of masters and apprentices, method and madness pays heed to tradition, while searching for unordinary. After endless exploration and small batch distillations in the micro distillery, Midleton, 16 eclectic botanicals, including black lemon & Irish gorse flower, came together to form a gin filled with clean character and a hint of chaos. Juniper berries, sweet & bitter orange peel, black lemon, lemon peel & lemon verbena, coriander, cardamom & caraway seeds, ginger, nutmeg, cassia bark, lavender, basil & bay leaves and Irish gorse flower.

Aperol is best enjoyed in its signature cocktail, the Aperol Spritz, a traditional Italian aperitif. It is bright orange in color, light on alcohol (11%), refreshing and has a bittersweet taste deriving from a blend of high-quality herbs and roots. Aperol brings people together and is the perfect drink to start the evening, all year round. The drink matches perfectly with food: the Aperitivo ritual born in Veneto sees the Aperol Spritz served with some traditional light bites called ''cicchetti', small dishes that usually include tiny sandwiches, olives and small portions of local dishes.
