2 eggs
120g flour
120ml milk or buttermilk
25g butter
Maple syrup
Icing sugar
Blueberries (optional, for topping)

Ingredients

  • 2 eggs (whites)
  • 120g flour
  • 120ml milk or buttermilk
  • 25g butter (melted)
  • Maple syrup
  • Icing sugar
  • Blueberries (optional, for topping)

Method

  1. Whisk the egg whites until fluffy.
  2. In a separate bowl, combine the egg yolks with the flour and milk or buttermilk.
  3. Add the melted butter and mix well.
  4. Gently fold in the whisked egg whites.
  5. Lightly grease a non-stick pan and spoon in the pancake mixture.
  6. Top with blueberries if desired and cook on medium heat for 2-3 minutes before flipping.
  7. Once cooked, dust with icing sugar and drizzle with maple syrup.
  8. Serve warm and enjoy!
