Ingredients
2 eggs
120g flour
120ml milk or buttermilk
25g butter
Maple syrup
Icing sugar
Blueberries (optional, for topping)

- 2 eggs (whites)
- 120g flour
- 120ml milk or buttermilk
- 25g butter (melted)
- Maple syrup
- Icing sugar
- Blueberries (optional, for topping)
Method
- Whisk the egg whites until fluffy.
- In a separate bowl, combine the egg yolks with the flour and milk or buttermilk.
- Add the melted butter and mix well.
- Gently fold in the whisked egg whites.
- Lightly grease a non-stick pan and spoon in the pancake mixture.
- Top with blueberries if desired and cook on medium heat for 2-3 minutes before flipping.
- Once cooked, dust with icing sugar and drizzle with maple syrup.
- Serve warm and enjoy!
