250 g Cherry Tomatoes halved
1 tsp Cumin Seeds
4 tbsp Good4U Salad Super Seeds

12 - SuperValu Radishes sliced

1 clove Garlic chopped

1 - SuperValu Avocado halved, stoned and cut into chunks

Directions
- Preheat the grill to medium-high.
- First prep the aubergine. Cut it lengthways and drizzle with olive oil, then sprinkle with the cumin seeds and a pinch of salt. Grill for 2 minutes on each side.
- Heat a splash of oil in a heavy-based cast iron pan over a medium heat (or you can grill them on a medium barbecue). Add the burgers to the pan and cook for 6 minutes on each side.
- Peel the cucumber and scoop out the seeds in the centre, then cut into chunks. Put the cucumber and avocado in a blender with the garlic, dill and lemon juice, then blitz with enough extra virgin olive oil to create a smooth dressing. Season to taste with salt and pepper.
- To serve, divide the bagged salad between four bowls. Add the grilled aubergine, sliced radishes, halved tomatoes and a dollop of hummus, then top with a cooked turkey burger. Drizzle over the avocado dressing and top with a sprinkle of the salad seeds.
- Tip: Double the recipe for a BBQ and serve with toasted brioche buns so that guests can enjoy a more classic burger too.
