Gem No-Bake Chocolate Salami
Despite the name, this chocolate salami contains no meat. It’s a tasty sweet treat made from rich chocolate, biscuits, raisins, and diced marzipan. The end result is a biscuit cake log that resembles a salami, both in shape and appearance. This is another great canape option that can be made in advance. Simply slice and serve when your guests fancy a sweet treat.

Gem No-Bake Chocolate Salami

Ingredients
390g Digestive Biscuits
60g Gem Gourmet Raisins
60g Gem Marzipan, Diced
350g Gem Dark Chocolate Chips
240ml Cream
60g Butter, Melted
Directions
- Place the biscuits into a bowl and with a rolling pin, break them into bite-size pieces.
- Add the diced marzipan pieces and raisins to the bowl. Set aside.
- In a separate bowl, add the chocolate and melt over a pot of simmering water.
- Once melted, remove from the heat and pour in the cream.
- Mix well to combine.
- Add the melted butter and again, mix to combine.
- Spoon this chocolate mixture over the biscuits and mix to coat everything.
- Layer 3 lengths of cling film on your counter, spoon the biscuit mixture onto it, and roll it up like a sausage to create a tight chocolate log.
- Chill for two hours.
- To serve, remove from the fridge and discard the clingfilm.
- With a pastry brush, dust the chocolate log with some icing sugar and tie some kitchen string around the biscuit cake to resemble a salami.
- Slice and serve.
