Preparation & Usage

Pizza Dough 1000 g Flour 00 590 g Water 30 g Salt 0,5 - 2,0 g Yeast Preparation method In a large bowl dissolve salt into the water. Add 10% of the 00 flour and mix well. Slowly add all of the flour and the yeast until all combined. Turn dough onto a lightly floured surface, knead for about 10 mins until smooth and elastic. Place the dough into a lightly floured deep bowl and cover with a damp cloth and set aside to rise for 30 mins. Divide into 6 - 8 balls. Place on a floured surface and cover with a damp cloth for approx. 10-12 hours while they rise again, doubling in size. Place on a lightly floured surface and stretch the dough by hand.
