  • Diced Chicken Fillets

Method

  1. Thinly slice your vegetables of choice. Add them to a large oiled pan over a medium heat and cook for 3 - 4 minutes.
  2. Add the diced chicken to the pan and cook until brown. If the pan gets dry, add a splash of water to ensure that the vegetables don’t burn
  3. After 5 minutes add the sauce and bring to the boil. Reduce to a low heat and cook for 10 - 15 minutes until the chicken is cooked through.
  4. While the chicken is cooking boil the rice. Take the curry off the heat, stir in some natural yogurt (optional) and season to your liking. Serve the chicken curry on a bed of rice.
