Smokey Cheese and Potato Mornay

Ingredients
1.5kg SuperValu Roosters (potatoes), peeled and cubed (not cooked through)
1 large white onion, thinly sliced
30g butter
1 pack SuperValu Streaky Bacon, cooked & chopped
100ml white wine
300ml milk
400ml cream
4 sage leaves
100g smoked Applewood cheddar cheese, grated
100g SuperValu cheddar cheese, grated
Directions
- Preheat the Oven: Preheat your oven to 185°C.
- Cook the Potatoes: While the oven preheats, boil the cubed potatoes until partially cooked but still firm. Drain and set aside.
- Sauté the Onion and Bacon: In a large buttered saucepan, sauté the sliced onion until softened. Add the chopped bacon and cook until crispy
- Combine the Creamy Mixture: Add the wine, milk, cream, sage leaves, salt, and white pepper to the pan. Stir in the grated cheeses and cooked potatoes.
- Bake and Serve: Transfer the mixture to a baking dish and sprinkle with the chopped bacon. Bake for 40 minutes or until bubbly and golden brown on top.
