300g wholemeal flour
100g plain flour
80g rolled oats
2 tbsp light brown sugar
2 tsp bread soda
20g butter
1 egg
300ml Guinness
500ml buttermilk
2 tbsp black treacle

  • 300g wholemeal flour
  • 100g plain flour
  • 80g rolled oats, plus 2 tbsp for the topping of the bread
  • 2 tbsp light brown sugar
  • 2 tsp bread soda
  • 1 tsp sea salt
  • 20g butter, melted
  • 1 egg
  • 300ml Guinness
  • 500ml buttermilk
  • 2 tbsp black treacle

Method

  1. Pre-heat oven to 180 °C (fan).
  2. Line 2 x 1lb loaf tins.
  3. In a large mixing bowl, whisk together the wholemeal flour, plain flour, oats, sugar, bread soda and salt.
  4. In a large measuring jug, whisk together the melted butter, egg, buttermilk, Guinness and treacle.
  5. Make a well in the centre of the dry ingredients and, using a fork, mix in the wet ingredients.
  6. Stir together until combined (the mixture will appear quite wet).
  7. Divide the mixture between the two tins.
  8. Bake the bread in the pre-heated oven for 40 minutes.
  9. Once nice and golden, cover the tops with foil to help prevent them from burning.
  10. Cook for an additional 20 minutes.
  11. Remove the loaves from their tins and bake for a further 10 minutes to give a nice crust.
  12. Total baking time is 75 minutes.
  13. Once baked, allow to cool in the tin for 10 minutes.
  14. Remove and wrap in a clean tea towel to cool completely on a cooling rack.
