After a total de-stemming, the long maceration during the vinification is performed under careful temperature control to bring out the best parts of the tannins potential. The wine has been aged in new French casks for 12 months long in the underground cellars of the Château. Winemakers comments: Deep colour, aromas of blackberries and hints of spice. The ageing has given elegance to its rich and tannic structure. But we still needed barrels to age our wine, so we purchased new and used bourbon barrels. Today, American and French oak wine barrels are common place, so the inspiration for 1000 Stories is a nod to the way things were. We've selected new and used bourbon barrels for these small batches of Zinfandel, which impart characteristics specific to these barrels: charred vanilla, dried herbs and a hint of caramel."
