Spice Bag Potatoes

Ingredients
500g roosters peeled and diced
1 red bell pepper, sliced into thin strips
1 white onion, sliced into thin strips
1 red chili pepper, sliced into rings
2 tablespoons sesame oil
Spring onion, for garnish
1 tbsp five spice seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground Szechuan peppers
1 tsp salt
1/4 tsp chili flakes
Directions

Ingredients

  • 500g roosters peeled and diced
  • 1 red bell pepper, sliced into thin strips
  • 1 white onion, sliced into thin strips
  • 1 red chili pepper, sliced into rings
  • 2 tablespoons sesame oil
  • 1 tablespoon of spice bag seasoning - Ingredients listed below
  • 1 tbsp five spice seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground Szechuan peppers
  • 1 tsp salt
  • 1/4 tsp chili flakes
  • Spring onion, for garnish

Method

  1. Peel and dice potatoes, rinse in cold water, strain and dry.
  2. Place in a bowl with a little vegetable oil and cook at 200°C in an air fryer or a preheated oven for 15 minutes or until cooked through, crispy, and golden brown.
  3. Meanwhile, mix together the spice bag seasoning in a small bowl.
  4. Add the sesame oil to a wok and sauté the onions and peppers.
  5. Once the onions are softened, add the cooked potatoes to the wok.
  6. Stir fry everything for 2 minutes to combine all the flavors.
  7. Turn off the heat, then add in half of your spice bag seasoning.
  8. Serve on a platter and top with sliced spring onions. If needed, sprinkle with additional spice bag seasoning.
