Spice Bag Potatoes

Ingredients
500g roosters peeled and diced
1 red bell pepper, sliced into thin strips
1 white onion, sliced into thin strips
1 red chili pepper, sliced into rings
2 tablespoons sesame oil
Spring onion, for garnish
1 tbsp five spice seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground Szechuan peppers
1 tsp salt
1/4 tsp chili flakes

- 500g roosters peeled and diced
- 1 red bell pepper, sliced into thin strips
- 1 white onion, sliced into thin strips
- 1 red chili pepper, sliced into rings
- 2 tablespoons sesame oil
- 1 tablespoon of spice bag seasoning - Ingredients listed below
- 1 tbsp five spice seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground Szechuan peppers
- 1 tsp salt
- 1/4 tsp chili flakes
- Spring onion, for garnish
Method
- Peel and dice potatoes, rinse in cold water, strain and dry.
- Place in a bowl with a little vegetable oil and cook at 200°C in an air fryer or a preheated oven for 15 minutes or until cooked through, crispy, and golden brown.
- Meanwhile, mix together the spice bag seasoning in a small bowl.
- Add the sesame oil to a wok and sauté the onions and peppers.
- Once the onions are softened, add the cooked potatoes to the wok.
- Stir fry everything for 2 minutes to combine all the flavors.
- Turn off the heat, then add in half of your spice bag seasoning.
- Serve on a platter and top with sliced spring onions. If needed, sprinkle with additional spice bag seasoning.
