Caprese Star Appetisers

2 sheets ready-made puff pastry 
1 egg, beaten 
10 pearl mozzarella balls, halved 
8 Sun-dried tomatoes, chopped 
3 tbsp basil pesto 
20 baby basil leaves

- 2 sheets ready-made puff pastry
 - 1 egg, beaten
 - 10 pearl mozzarella balls, halved
 - 8 sun-dried tomatoes, chopped
 - 3 tbsp basil pesto
 - 20 baby basil leaves
 
Method
- Preheat the oven to 220°C (200°C fan) / Gas 6.
 - Cut 20 star shapes from the puff pastry using a cutter.
 - Arrange the stars on a lined baking tray, spacing them slightly apart.
 - Brush each star with beaten egg and bake for 10 minutes, until golden and puffed.
 - Remove from the oven, place half a mozzarella pearl on each star, and return to the oven for 1–2 minutes until just melted.
 - Transfer the pastry stars to a serving platter.
 - Top each with a little sun-dried tomato, a small dollop of pesto, and a baby basil leaf.
 - Top Tip: These can be baked and cooled a few hours ahead. Simply reheat in a hot oven for 2–3 minutes before topping and serving.
