Located on the fringe of Europe, Dingle enjoys a pristine environment like no other. Buffeted by winds from the Atlantic Ocean, the air is fresh, just like our Gin. Using our own hand beaten copper still, fondly known as Oisín, spirit vapour passes through our flavour basket to capture the unique character of nine traditional and locally grown & harvested juniper, fuschia, bog myrtle heater, chervil, hawthorn, angelica and coriander. The resulting distillate is cut with pure water drawn from our well 240 feet below our distillery. Each bottle is then hand filled and numbered by batch. Aperol is best enjoyed in its signature cocktail, the Aperol Spritz, a traditional Italian aperitif. It is bright orange in color, light on alcohol (11%), refreshing and has a bittersweet taste deriving from a blend of high-quality herbs and roots. Aperol brings people together and is the perfect drink to start the evening, all year round. The drink matches perfectly with food: the Aperitivo ritual born in Veneto sees the Aperol Spritz served with some traditional light bites called ''cicchetti', small dishes that usually include tiny sandwiches, olives and small portions of local dishes. Try it at home! Aperol was created by the Barbieri brothers and launched in 1919 at the Padua International Fair, soon becoming one of Italy's favorite liqueurs, now taking the world by storm. The original recipe has remain unchanged since 1919. To make the perfect Aperol Spritz, fill a large wine glass with ice. Add 3 parts of Prosecco (75ml) followed by two parts of Aperol (50ml) with 1 part soda water (25ml). Stir and garnish with a slice of orange. Salute!

Bushmills Black Bush Irish Whiskey (70 cl), €35.50

World's Oldest Licensed Whiskey Distillery Found on County Antrim's rugged coastline, the village of Bushmills is home to the world's oldest licensed whiskey distillery. Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction the Giant's Causeway. Bushmills is more than just a whiskey. It's a village, where family, friends and neighbours work side by side at the distillery. As we often say, "without the village, there would be no whiskey and without the whiskey, there would be no village".
