Store in a dark, dry, cool but frost free airy place. Light turns potatoes green. Keep out of direct sunlight. Warmth and darkness may cause sprouting, shrivelling and rotting. Handle gently to prevent bruising. Preparation and Usage: Cottage Pie Preparation Time: 35 Minutes. Cooking Time: 60 Minutes. Serves: 4. Ingredients - 450g SuperValu lean minced beef - 1 onion chopped - 2 carrots, peeled & diced - 1 tbsp olive oil - 125ml water - 1 tbsp plain flour - 400g tomatoes - 2 tbsp tomato purée - Salt & black pepper to taste Mash - 1kg cooked rooster potatoes - 1 tbsp butter - 1 egg yolk - Dash of milk or cream Heat the olive oil in a frying pan. Add the onion and cook until soft. Remove from the frying pan. Heat a little more of the olive oil and brown the minced beef. Add in the flour and cook for 2-3 minutes. Add in the carrots, onions, tomatoes, tomato purée, water, salt & pepper. Bring to the boil, then reduce the heat and simmer gently for 15-20 minutes. Preheat the oven to Gas Mark 4, 180°C (350°F). Pour the mince mixture into a casserole dish. Mash the potatoes with the egg yolk, butter, milk or cream and score with a fork. Bake in the preheated oven for 20-25 minutes until the potato is nicely browned.
