Spanish Charcuterie with Gubbeen Cheese and Olive Tapenade

2 packets Signature Tastes Spanish charcuterie
1 jar Cocktail gherkins
1 jar Sundried tomatoes
2 Pkts Tim’s Table Lavosh crackers
2 Wedges of Signature Tastes Gubbeen cheese, cut into slices
1 jar Green pitted olives
1 Shallot peeled and chopped
½ clove garlic, chopped
30mls Signature Taste Extra Virgin Olive Oil
Directions
- To make the olive tapenade, blend the green olives, chopped shallot, garlic, and olive oil until smooth. Transfer to a small, decorative bowl.
- Place slices of Gubbeen cheese on one side of a serving platter, laying them out neatly for easy access.
- Next to the cheese, arrange the Spanish charcuterie in overlapping piles or rows to create a visually appealing gradient of colors and textures.
- Arrange Tim’s Table Lavosh Crackers in a semi-circle around the cheese and meat.
- Fill one small bowl with cocktail gherkins and place it on one side of the platter, and another small bowl with sundried tomatoes on the opposite side.
