Ingredients
1 pinch Baking Powder
1 large Banana mashed
1 tsp Coconut Oil or rapeseed oil
2 - Eggs lightly beaten
1 pinch Ground Cinnamon plus extra for serving
1 pot Natural Yogurt (optional)
1 handful SuperValu Blueberries (optional)
1 handful SuperValu Raspberries (optional)
Directions

Ingredients

  • 1 pinch Baking Powder
  • 1 large Banana mashed
  • 1 tsp Coconut Oil or rapeseed oil
  • 2 - Eggs lightly beaten
  • 1 pinch Ground Cinnamon plus extra for serving
  • 1 pot Natural Yogurt (optional)
  • 1 handful SuperValu Blueberries (optional)
  • 1 handful SuperValu Raspberries (optional)

Method

  1. Heat a 23 cm pan over a medium heat.
  2. While the pan is heating up, make the batter by mixing together the eggs, banana, baking powder, and cinnamon in a bowl or blender.
  3. When the pan is hot, add the oil and let it heat through. Pour in 2 tablespoons of batter at a time and cook for 30–60 seconds, until the bottom appears to be set.
  4. Flip with a spatula and cook for an additional minute or less.
  5. Serve warm and top with yogurt, berries, and a pinch of ground cinnamon.

Lighten Up: If you’re watching your saturated fat intake or your cholesterol levels, use rapeseed oil instead of coconut oil.
