Ingredients
6 SuperValu Burgers
6 brioche burger buns
40g salad leaves
2 tbsp olive oil
100g kimchi
4 tbsp peanut rayu
4 tbsp mayonnaise
50ml rice vinegar
2 tbsp caster sugar
1 tbsp sesame oil
¼ cucumber, thinly sliced
100g crispy onions
1 tbsp sesame seeds

  • 6 brioche burger buns
  • 40g salad leaves
  • 2 tbsp olive oil
  • 100g kimchi
  • 4 tbsp peanut rayu
  • 4 tbsp mayonnaise
  • 50ml rice vinegar
  • 2 tbsp caster sugar
  • 1 tbsp sesame oil
  • ¼ cucumber, thinly sliced
  • 100g crispy onions
  • 1 tbsp sesame seeds

Method

  1. Combine the mayonnaise and peanut rayu to create a rayu mayonnaise.
  2. In a separate bowl, make the pickled cucumbers by combining the rice vinegar, water, caster sugar, sesame oil, and seeds.
  3. Stir with a whisk until the sugar is dissolved, then add the sliced cucumber and let it marinate for 20-30 minutes in the cold liquid.
  4. Drizzle some oil on the preheated barbecue ridge or griddle pan, then add the burgers.
  5. Cook the burgers over indirect heat or medium/low heat, flipping them after 4-5 minutes on each side until cooked through.
  6. Once the burgers are cooked, drizzle the burger buns with olive oil and warm them on the barbecue. When warmed, remove from the barbecue and place on a serving platter.
  7. Assemble the burgers on brioche buns with rayu mayonnaise, pickled cucumber, crispy onions, and kimchi.
